We love the convenience of baby spinach and frozen peas, but any chopped green or another legume, like no-salt-added white beans or shelled edamame, would work well in place of the frozen peas if you prefer.

    This creamy soup draws inspiration from “marry me” chicken, a dish that features chicken and sun-dried tomatoes. We add to the soup by including zucchini and carrots to create a cozy, warming meal. Precooked chicken saves time and energy, so you can make this cozy soup on a busy weeknight, or any day when it’s cold out.

    Easy Slow-Cooker Potato-Leek Soup with Boursin

    This creamy slow-cooker leek soup showcases leeks’ mild onion flavor, enhanced by plenty of fresh and dried herbs and with potatoes adding texture and body. Boursin is a soft, spreadable cheese, similar to whipped cream cheese, that comes in a variety of flavors. We like how the garlic-and-herb flavor enhances the overall flavor of the soup, but you can substitute sour cream. To prevent the sour cream from curdling in the hot soup, place in a small bowl and slowly stir in some of the hot broth until the mixture is smooth and creamy-looking before adding to the slow cooker.

    Creamy Garden Tomato & Quinoa Soup

    This hearty garden tomato soup is loaded with vegetables. To thicken the soup, we puree it before adding the quinoa. Half-and-half and milk add creaminess and cut the acidity of the tomatoes, adding balance and letting the garden-fresh flavors shine. Serve with crusty bread or grilled cheese for dipping.

    Slow-Cooker Spinach & Artichoke Chicken Soup

    If you love spinach and artichokes, this is the perfect soup for you. The creamy base is packed with veggies and shredded chicken, which soaks up the broth while adding a boost of protein. Frozen artichoke hearts have less sodium than canned, but canned can be used in their place. Just be sure to give them a good rinse before adding them to the slow cooker.

    This soup is delightfully creamy and flavored with sweet sun-dried tomatoes and cheesy ravioli. We use oil from the sun-dried tomatoes to keep prep simple and enhance the flavor of this quick soup. If your sun-dried tomatoes are not oil-packed, soak them in hot water for a few minutes and then proceed with the recipe, using extra-virgin olive oil in place of the oil from the jar.
