Spiced Butternut Squash & Apple Casserole

Photographer: Morgan Hunt Glaze, Prop Stylist: Lydia Pursell, Food Stylist: Jennifer Wendorf

This spiced butternut squash and apple casserole is a warm, cozy dish that captures the essence of fall. This easy dish combines the natural sweetness of roasted butternut squash with the tartness of fresh apples, finished with savory goat cheese and sweet maple-glazed walnuts. We love the tart flavor that Granny Smith apples provide, but feel free to swap in a sweeter baking apple like Honeycrisp if you prefer.

Creamy Cabbage & Sun-Dried Tomato Casserole

Photographer: Robby Lozano, Food Stylist: Emily Nabors Hall, Prop Stylist: Lydia Pursell

This creamy cabbage with sun-dried tomatoes is pure comfort in a casserole dish. Tender, sautéed cabbage melds beautifully with the rich, cheesy sauce, and sun-dried tomatoes add a touch of tangy sweetness that brightens every bite. Serve this warming side with roasted chicken or pork, or over brown rice or another whole grain.

Creamy Chicken, Cabbage & Mushroom Casserole

Photographer: Jen Causey, Food Stylist: Margaret Monroe Dickey, Prop Stylist: Priscilla Montiel

This creamy chicken-and-mushroom casserole is a comforting and protein-packed dinner perfect for busy evenings. With the combination of shredded cabbage, mushrooms and the aromatic kick of green curry paste, this dish is packed with flavor. Using rotisserie chicken helps streamline prep, but this dish is also a great way to use up leftover chicken if you have any on hand.

    Unstuffed Zucchini Casserole

Photographer: Jen Causey, Food Stylist: Margaret Monroe Dickey, Prop Stylist: Hannah Greenwood.

This hearty dinner takes all the flavors of classic stuffed zucchini and turns them into an easy casserole. Instead of hollowing and stuffing each zucchini, everything is layered in one dish for a quicker, no-fuss dinner. A sprinkle of shredded cheese on top melts into a bubbly, golden layer that ties it all together. This cozy casserole is perfect for a weeknight dinner and is an excellent way to use up summer zucchini.

Cheesy Ground Beef & Cauliflower Casserole

Photographer: Brie Goldman, Food Stylist: Holly Dreesman, Prop Stylist: Gabriel Greco

Ground beef and cauliflower combine to create a hearty weeknight casserole that both kids and adults will love. Serve with tortilla chips and sour cream.

    Creamy Squash Casserole Recipe

Photographer: Stacy K. Allen, Food Stylist: Ana Kelley, Prop Stylist: Julia Bayless

This squash casserole recipe features sharp Cheddar cheese, yellow squash and a buttery, crispy cracker topping. It is key to cook down the squash in the skillet first, then drain and pat it dry as best you can so the casserole doesn’t become too watery. Yellow squash lends a pretty yellow hue, but bright green zucchini works well too.

    Veggie Lasagna

Photographer: Jennifer Causey, Food Stylist: Julian Hensarling, Prop Stylist: Christina Daley

Every layer of this delicious veggie lasagna has its own flavor profile. Cooking the vegetables before assembling the lasagna ensures the dish won’t be soggy. Be sure to squeeze the spinach well—spinach holds a surprising amount of water that will make your lasagna soupy. Lightly coat the foil with cooking spray before covering the lasagna to prevent the cheese from sticking. Serve with a mixed green salad and crusty garlic bread.

    Old-Fashioned Sweet Potato Casserole

    Diana Chistruga

Thanksgiving isn’t complete without a homemade sweet potato casserole. We like to sprinkle chopped pecans on top along with the marshmallows for a bit of texture.

    Carrot Casserole

Photographer: Jen Causey, Food Stylist: Rishon Hanners, Prop Stylist: Julia Bayless

Carrot casserole is a great holiday side dish that’s both creamy and savory with just a touch of sweetness from the carrots. Coriander and dry mustard add lovely background flavors to the cream sauce. Microwaving the carrots gives them a jump-start in the cooking process and ensures that they’re cooked through. The carrots should all be sliced thinly so they cook evenly. If you have one, a mandoline can make quick work of the slicing, but a good sharp knife will also do the trick.

Skillet Spinach, Mushroom & Wild Rice Casserole

Photographer: Jen Causey, Food Stylist: Emily Nabors Hall, Prop Stylist: Julia Bayless

This wild rice and mushroom casserole is the ultimate comfort food, combining hearty, wholesome ingredients with rich, savory flavors all in one skillet. The earthiness of the wild rice pairs beautifully with the meaty mushrooms, while fresh spinach adds a burst of color and nutrients. It’s the perfect balance of texture and taste—a cozy, one-pan meal that’s easy to make, which makes it even more comforting on those busy days!

    Loaded Cauliflower Casserole

    EatingWell

You’ll never want to eat roasted cauliflower any other way once you try this tasty recipe. Bacon, sour cream and sharp Cheddar cheese coat good-for-you cauliflower in deliciousness for an easy side that will make everyone actually want to eat their vegetables.

    Broccoli Casserole

This lightened-up broccoli casserole is sure to be a hit. Learn how to make this classic side dish healthier.

Sweet Potato, Sausage & Apple Casserole

    Will Dickey

This sweet potato, sausage and apple casserole is perfect for brunch or dinner. The crunchy top of the toasted bread combines winningly with a custardy filling studded with apples, sweet potatoes and savory sausage.
