    • Costco’s fall lineup features ready-to-bake comfort meals like chicken pot pie and stuffed peppers that taste homemade but save hours.
    • Easy sides and mains—like sheet-pan vegetables, cod fillets and ravioli—make cozy weeknight dinners quicker and healthier.
    • Seasonal favorites such as Irish beef stew and pumpkin pie bring all the comforting fall flavors with almost no prep required.

Fall is finally here, which means temperatures are cooling down enough for me to start making my favorite comfort foods—like soups and casseroles. But between work and two kids, I don’t always have time to make them all from scratch. Thankfully, autumn also means the return and rollout of several Costco seasonal items that taste like homemade but take way less time to prepare. From take-and-bake meals to essential mains and sides, and even a classic dessert that’s large enough to last for days, they’re all sure to make your weeknights a lot less stressful. Here are my top picks that you won’t want to skip.

    1. Chicken Pot Pie

Chicken pot pie is about as traditional as fall meals come, but making your own can take hours. Costco’s ready-to-bake version allows you to skip the hard work while enjoying homemade flavors. It’s packed with chunks of white chicken meat and tender peas and carrots, all smothered in a thick, herb-infused gravy. The crust is buttery and flaky and has a gorgeous lattice finish that makes it look like something you spent hours creating.

    2. Stuffed Bell Peppers

Costco’s stuffed bell peppers are another ready-to-bake comfort meal that can’t be missed. Each refrigerated tray includes a colorful variety of bell peppers overflowing with a well-balanced blend of seasoned ground beef and rice in a rich tomato sauce. Pop them into the oven or air fryer until warmed through and the cheese topping is golden brown.

    3. Sheet-Pan Vegetables

If you’re looking for a quick and healthy side to serve with the Costco rotisserie chicken you never leave the store without, head over to the frozen section for a huge bag of sheet-pan vegetables by Tattooed Chef. Each bag contains 4 pounds of mixed vegetables, including fall harvests, like Brussels sprouts and sweet potatoes. Spread them in a single layer on a lightly oiled baking sheet for a quick, satisfying side.

    4. Wild Alaskan Cod Fillets

Choosing in-season seafood helps support sustainability while delivering enhanced flavor and quality, making Kirkland’s frozen wild Alaskan cod a must-try. Each 2-pound package includes pre-portioned boneless, skinless fillets that require little more than defrosting and a bit of seasoning to make them dinner-ready. With so many EatingWell cod recipes to choose from, you’ll never run out of ideas for this Costco dinner shortcut.

    5. Spinach & Cheese Ravioli

Kirkland Signature’s Organic Spinach & Cheese Ravioli are packed with the leafy cool-season crop and take just 4 minutes to prepare. Top the pillowy pasta pieces with a drizzle of olive oil and a sprinkle of Parmesan cheese, or gently simmer them in your go-to marinara or pesto sauce to make them even more flavorful. A side salad is all that’s needed to complete the cozy, yet light meal.

    6. Irish Beef Stew

Cooked using the sous vide method, Ruprecht’s Irish beef stew features chunks of ultra-tender USDA Choice Beef and a hearty mix of carrots, potatoes and onions, simmered in a delicious brown gravy. Simply heat for about 12 minutes and top with fresh herbs for a meal that tastes like it’s been simmering on your stovetop all day.

    7. Chicken Schnitzel

These low-calorie chicken cutlets will save you the time, hassle and mess of the breading and frying process. Simply heat them in the oven or air fryer, then top them with the included creamy mushroom gravy and a squeeze of fresh lemon juice for a bright finish. Serve some sautéed arugula alongside. Leftover cutlets make for a mouthwatering sandwich filling.

    8. Sweet Potato Fries

Roots Farm Fresh Organic Sweet Potato Fries are the perfect Costco frozen find for effortlessly adding big fall flavor to meals. They’re great on warm salads and as a side for proteins like steaks and roasted chicken. And if breakfast for dinner is something you do now and then, you won’t regret pairing them with eggs cooked over easy—the yolk makes the best dip, and the combination of soft and crunchy textures is so satisfying.

    9. Gyoza Dumpings

When I want to order takeout but am also trying to stick to my food budget, I reach for gyoza dumplings from the frozen aisle. They’re stuffed with seasoned ground pork, two types of cabbage and green onions. You can steam them, then finish them with the included chili oil, but I especially love tossing them into stir-fry or a pot of brothy vegetable soup.

    10. Pumpkin Pie

I don’t eat dessert every night, but when the fall season rolls around, there’s one Costco treat that I find pretty hard to resist: pumpkin pie. Costco’s version has all the traditional flavors and textures I love, and I hardly have to lift a finger to enjoy them. The pie is so big that I often freeze half, then keep the other half in the fridge for a quick and satisfying weeknight dessert.

    The Bottom Line

If cooler weather makes you crave cozy dishes like stews and roasted vegetables, this list of seasonal fall foods available at Costco is sure to deliver all the autumn vibes in less time. Think ready-made meals that you can heat and serve in minutes, mains and sides for less heavy lifting in the kitchen and even a classic dessert for a mid-week treat.
