    Valerie Bertinelli’s Chicken Milanese Is Classic

    If you’re looking for a quick and easy dinner to make ahead of the weekend, Valerie Bertinelli posted the perfect high-protein option. In a recent Instagram Reel, the actor and television host shared her version of chicken Milanese, a dish starring a breaded chicken cutlet paired with a humble side salad.

    This dinner is so simple. First, it uses simple pantry staples for the breading, like oregano, garlic salt and seasoned breadcrumbs (Bertinelli uses Progresso’s Italian Style bread crumbs, which you can buy on Amazon Fresh). 

    With these dry ingredients in a large Ziploc bag, she adds in freshly shredded Pecorino Romano and lemon zest. Bertinelli coats all of the chicken breasts in the sealed bag by shaking and turning the seasoned breadcrumbs until the chicken is fully coated.

    Cook each breaded chicken breast on a hot pan with olive oil, letting each side cook for three minutes. Because the chicken is pounded thin, they will be fully cooked in minutes, making this a dinner you can get on the table in no time. To plate, add your crispy chicken cutlet to the dish and top it with dressed greens and shredded cheese.

    For a vibrant homemade dressing, Bertinelli whisks lemon juice, Dijon mustard, salt, pepper and olive oil in a bowl. In the same bowl, she dresses the arugula before topping the chicken with then greens. 

    After taking a bite, the star declares that it’s “so good,” and her comments are loaded with praise. One commenter writes that they “definitely will be making this,” and we have to agree! Bertinelli’s recipe is quite like our own Chicken Milanese with Arugula-Cherry Tomato Salad, which is a high-protein, diabetes-friendly meal that’s perfect for weeknights.
