Chickpea Casserole with Spinach & Feta

Photographer: Morgan Hunt Ward, Prop Stylist: Phoebe Hauser, Food Stylist: Emily Nabors Hall.

This Chickpea Casserole is a cozy, one-pan meal that’s both hearty and wholesome. Tender spinach, nutty chickpeas and brown rice are bound together with a touch of cream cheese and finished with tangy feta. Fresh dill, nutmeg and lemon juice brighten the flavors, while a hint of red pepper adds gentle heat. Baked until bubbling and topped with lemon zest, it’s a dish that feels comforting yet vibrant.

Creamy Lemon-Parmesan Broccoli & White Bean Casserole

photographer: Jen Causey, food stylist: Julian Hensarling, prop stylist: Josh Hoggle

This broccoli and white bean casserole is the ultimate comfort food dinner. This hearty dish combines tender broccoli and creamy white beans in a velvety lemon-Parmesan sauce with a bubbly, cheesy top. It’s perfect for cozy family dinners or for bringing to someone as part of a meal train. Serve it alongside a crisp green salad for a meal that feels like a warm hug on your plate.

Cheesy Chicken & Broccoli Alfredo Skillet Casserole

Photographer: Stacy k. Allen, Props: Christina Brockman, Food Stylist: Jennifer Wendorf

This delightful one-skillet cheesy chicken Alfredo casserole combines penne pasta, tender broccoli and shredded rotisserie chicken smothered in a creamy sauce. To simplify the sauce, we opt for a pre-shredded Italian cheese blend. Though cheese blends vary, they typically contain Parmesan cheese, imparting the traditional Alfredo flavor. Seek blends with aged cheeses or blends that include sharp cheeses like provolone or Asiago for a richer flavor profile.

    Baked Feta & Tomato Chickpeas

Photographer: Fred Hardy, Food Stylist: Jennifer Wendorf, Prop Stylist: Lydia Pursell

This simple baked feta casserole recipe turns cherry tomatoes, feta cheese and chickpeas into a hearty, protein-rich vegetarian meal. After baking, it creates a savory-sweet tomato–olive oil sauce ideal for slathering on pita bread. Feta cheese in brine melts more readily compared to dry, crumbled feta, so it’s worth seeking out. For a different take, replace the chickpeas with creamy white beans.

    Chicken Taco Casserole

Fred Hardy (photographer); Jennifer Wendorf (food stylist); Shell Royster (prop stylist)

This flavorful chicken taco casserole is packed with veggies, chicken, cheese and crispy tortilla chips and baked to perfection, then topped with fresh tomatoes, crisp iceberg lettuce and creamy avocado—just like a classic taco. Make it your own by swapping out the black beans for pinto beans or adding pepper Jack cheese for some added kick. If you want to keep it mild, opt for a milder taco seasoning and skip the jalapeños.

Creamy Zucchini & Rotisserie Chicken Pasta Bake

Photographer: Fred Hardy, Food Stylist: Jennifer Wendorf

If you’re swimming in zucchini, take some off your hands with this creamy zucchini and chicken pasta bake. The zucchini melts into the sauce, while Dijon mustard and lemon zest brighten the flavor. You can swap out the zucchini for summer squash if you prefer, and if you have leftover chicken you can use that in place of the rotisserie chicken.

Cheesy Black Bean & Quinoa Skillet Casserole

    Photographer: Rachel Marek

This Southwestern-inspired one-skillet casserole is stuffed with quinoa and plenty of fresh vegetables. Sharp Cheddar cheese flavors the filling and adds a layer of ooey-gooey melted cheese on top.

Anti-Inflammatory Lemony Salmon & Orzo Casserole

    Stacy Allen

This lemony salmon and orzo casserole is a one-dish dinner that’s packed with omega-3 fatty acids—a polyunsaturated fat in salmon that can help tame inflammation and may even help lower blood pressure. Here, omega-3-rich salmon sits on top of an orzo mixture that bakes in the oven, instead of boiling on the stovetop, absorbing all the bright and lemony flavors while it cooks.

    Chicken Parmesan Casserole

Photographer: Brie Goldman, Food Stylist: Annie Probst, Prop Stylist: Breanna Ghazali

We took the best parts of chicken Parmesan—ooey-gooey cheese, crispy breadcrumbs and plenty of tomato sauce—and spun them into an easy family-friendly casserole.

    Philly Cheesesteak Casserole

Photographer: Fred Hardy, Food Stylist: Jennifer Wendorf, Prop Stylist: Julia Bayliss

With the combo of beef, cheese and bell pepper, this easy casserole hits the nail on the head when it comes to the flavors of classic Philly cheesesteak. It’s sure to be a new family favorite that’s quick enough to pull off on a weeknight. We love the flavor smoked provolone lends to the dish, but if you want a more traditional flavor, aged provolone works just as well.

    Pesto Tuna Noodle Casserole

Photographer: Grant Webster, Food Stylist: Holly Dreesman, Prop Stylist: Lexi Juhl

A creamy pesto sauce with sweet shallots and wilted spinach gives a light and bright spin to classic tuna noodle casserole. Albacore tuna is an ideal choice, as it holds its texture well once mixed in, although any water-packed tuna will do the job. For the best results, we recommend using refrigerated pesto for its fresh flavor which enhances the overall dish.

    Caprese Casserole

    Sara Haas

This healthy casserole comes together easily, making it the perfect choice for any weeknight dinner. Be sure not to overcook the pasta or it will turn mushy. And don’t skip the balsamic vinegar at the end—it’s a bright finishing touch.

    Spaghetti Squash Casserole

Strands of tender squash replace pasta for a more flavorful version of spaghetti pie casserole. Not to mention, spaghetti squash is a lower-carb alternative to pasta and saves more than 150 calories per serving compared to a traditional recipe. A sprinkling of nutty fontina cheese melts into a gooey topping.

    Nacho Cauliflower Casserole

Photographer: Victor Protasio, Food Stylist: Ruth Blackburn, Prop Stylist: Josh Hoggle

This cauliflower casserole is inspired by nachos and stuffed with tender roasted cauliflower, sweet red pepper and brown rice. Salsa helps bind the ingredients together, along with melted cheese. Crushed tortilla chips on top add crunch. Serve with the suggested garnishes, or add your own favorite toppings to complete the dish.

Skillet Caprese Chicken Casserole for Two

    Brie Passano

All the flavors of a caprese salad—mozzarella, tomatoes and basil—are featured in this one-skillet dinner. The addition of chicken and pasta adds depth and heartiness to this tasty meal. This recipe was adapted from our popular Skillet Caprese Chicken Casserole to serve two instead of six.
