    This Sheet-Pan Ham & Spinach Quiche is your solution for times you want quiche without the fuss. Protein-packed eggs and half-and-half form a rich, custardy base that gains classic flavors from onions and garlic, and a little tang from Dijon mustard. Salty ham is balanced by sharp Cheddar cheese, while spinach adds a fresh touch. Keep reading for our expert tips, including ingredient substitutions you can make.

    Tips from the EatingWell Test Kitchen

    These are the key tips we learned while developing and testing this recipe in our Test Kitchen to make sure it works, tastes great and is good for you too! 

    • To save time on preparation, consider using pre-chopped onions and minced garlic from the grocery store’s produce section.
    • For easier cleanup, line your baking sheet with parchment paper before applying cooking spray.
    • To make it vegetarian, try adding sautéed mushrooms instead of using ham, and check the label on the cheese package to ensure it’s not made with animal rennet.
    • Feel free to experiment with different types of cheese. Gruyère, Swiss or provolone would all work well.

    Nutrition Notes

    • Eggs are packed with protein, with about a third of the egg’s protein coming from the yolk. And while they do contain some saturated fat, the yolks also provide antioxidants, vitamin D and choline, which is necessary for a healthy nervous system.
    • Spinach is a leafy green that is loaded with nutrients, like vitamins A, C and K, iron, fiber and folate. Eating spinach regularly may help support healthy blood pressure, thanks to its nitrates, and its vitamin A is great for eye health.
    • Ham brings some more protein to this quiche. Ham steak is typically pretty lean, contributing almost no saturated fat. It does, however, tend to be salty, so if you are watching your sodium intake, feel free to use less ham in this recipe. 
    • Cheese is another protein-rich ingredient in this quiche. It also adds some calcium and probiotics, those good-for-your-gut bacteria that help strengthen your microbiome.
